Shiitake Dried Mushroom

Shiitake mushroom or Black Forest mushroom is high-priced for its flavor and medicinal value. It is consumed both dried and fresh. Both have earthy aroma and taste but the intensity is greater in dried shiitake. When cooked, fresh shiitake have a tender texture while dried ones are slightly chewier.
